Boiled Cake Recipe
This is a recipe for a favourite teatime pudding, namely boiled cake. Although it doesn't sound particularly appetising, you will be surprised. In addition it is quick and easy.
Boiled cake
Recipe Ingredients:
4 oz butter
4 oz caster sugar
1/2 pint water
1lb mixed dried fruit
8oz self raising flour
2 beaten eggs
Pinch of bicarbonate of soda
Method:
Pre heat oven to 325F. Grease and line a 8inch cake tin in preparation. In a saucepan mix the butter, sugar, bicarbonate, water and the dried fruit. Bring thsi to the boil. Boil for 2 minutes then simmer for 15. Remove from the heat and allow to cool.
Fold in the flour, then the eggs and transfer to the cake tin. Bake thsi for between 1&1/2 to 2 hours. Once you can insert a skewer into the middle and it comes out clean then it is ready. Allow to cool slightly then turn out onto a wire rack.
