Traditional Scottish Beef with Blue Cheese Recipe
This may initially appear to be a strange combination for a recipe. Cheese and meat don't always blend well together (think of some burgers you have had!!) but in this dish they should. If you can obtain it try a good Scottish Blue Cheese (such as Lanark Blue). If you can't, why don't you support your local farmers market?
Rich Pork Hotpot
Ingredients:
4 lean beef steaks
2 tablespoons vegetable oil (for frying)
1 red onion (sliced)
2 teaspoons Scottish Mustard
4 oz blue cheese
4 tablespoons soft cream cheese
2 tablespoons milk
Seasoning (salt/pepper)
Method:
heat the oil and fry the steaks to the personal taste of those eating (rare, medium, well etc.) Remove from pan and set aside in a dish which will retain the heat (placing in oven MAY dry them out). Fry the onion until soft but NOT brown. Stir in both cheeses, the milk and the mustard and cook on a gentle heat until completely melted.
Serve the steaks with the sauce poured over them, along with a potato dish of your choice. New boiled potatoes?
