Beef & Mixed Vegetables
This is a traditonal Turkish dish which would be served as
a main dish with rice on the side. The flavoursome ingredients like eggplant, olive oil,
potatoes add more taste to the recipe.

Recipe Ingredients:
- Eggplant Cut into Pieces - 1
- Potatoes - 4
- small zucchini in chunks - 1
- Finely Chopeed/ Sliced Onion - 1
- Garlic Cloves - 3
- Green Onions finely Sliced - 3
- Cubanelle Pepper - 1
- Tomato paste - 1/2 cup
- Olive oil - 1/4 cup
- ground Beef - 1 cup
- Salt & Black pepper to taste
Method:
In a deep bowl add water and salt and mix well. Add the washed eggplants to it and soak for 1 hour. Squeeze the egg plants and remove the water from them. In a deep pan add onions, salt & pepper , potatoes. On low heat cook for 15 mins. Add the beef and cook for another ½ hour. Add the other remaining items and egg plants and cook for 15 mins. Serve it hot.
