Almond Pudding Recipe
This is a recipe for Suffolk Almond Pudding. named after the area of Suffolk in Southern England it is a rich creamy pudding full of calories. Which of course also means that it is particularly tasty.
Almond Pudding
Ingredients:
3/4 pint milk (full fat)
3 oz white sugar
5fl oz double cream
2 oz fresh white breadcrumbs
6 oz ground almonds
1 teaspoon orange (or rose) flower water
3 beaten eggs
1oz butter
Method:
Preheat oven to 350F. Warm the milk and cream together in a saucepan (do NOT boil). Place the breadcrumbs in a bowl and add the warmed cream & milk mixture. Leave this to stand for approx. 5 minutes. Then add the sugar, almonds, water and leave to stand for another 10 minutes. After this time the liquid should be more or less absorbed.
Stir in the eggs, mixing well. Then pour the mixture into a buttered 2 pint pie dish. Dot the surface with the butter and place the dish in a roasting tin. Pour boiling water into the tin until it comes to approx. 1/4 up the side of the PIE dish. Bake for 30 minutes.
