Scottish Recipes - Potted Herrings

This recipe is excellent as a simple cold fish dish. In addition to herrings you could also try mackerel.

Ingredients
8 small fresh herrings (gutted)
salt and pepper
1 large onion (VERY finely sliced)
2 bay leaves
10 peppercorns
2 cloves
1/4pt water
1/4pt malt vinegar
1/2 teaspoon sugar (white granulated)

Method
Set oven to 325F. De-bone the herrings and sprinkle with salt and ground pepper. Tightly roll the herrings from head to tail, keeping the skin side on the outside. Place these in a medium sized ovenproof dish.

Cover with the sliced onion and add the bay leaves, peppercorns and cloves.

Mix the liquid ingredients together, adding the sugar and stir thoroughly. Pour this liquid over the fish.

Cover and bake for 30 to 40 minutes. After baking, allow the herrings to cool (IN the liquid), then drain and chill before serving.
This recipe should serve 4 people.
