Scottish Recipes - Fishie tatties

This is a very simple dish which will use up left over fish. It combines left over fish with another basic ingredient (potatoes) to provide a hearty, filling snack.

Fishie tatties

Ingredients:
4 large baking potatoes
1 teaspoon anchovy essence
2 oz butter
2 oz Scottish Cheddar cheese
Left over cooked fish

Method:
Bake the potatoes in their jackets until crisp on the outside but soft on the inside. Cut each one in half, scoop out the contents and put the contents into a bowl. Add the butter, anchovy essence and cooked fish to the potatoes. Mix thoroughly and replace in the potato jackets. Sprinkle both halves with cheddar cheese and place under a hot grill until browned on top and heated through.
